3 ingredient PROTEIN Pancakes!

The most important meal of the day is breakfast.

Start your day with something delicious and nutritious! Not to mention simple and easy to make! Start the day off with a protein packed breakfast to fuel you through the morning. Perhaps a cup of java to go with it too 🙂

 

Lets’s start with the basics.. the wet and dry ingredients… well that’s basically it! HAHA

  • 2 whole eggs
  • 1/2 ripe banana
  • 1 serving vanilla greek yogurt protein powder from Genuine Health (38 g)

Mix it all up! You may want to mash the banana first and stir it up or you can even blend it all up.. but that means more dishes.

PREPAREEEE THE PANNNNNN! On medium heat I used a non stick pan or you can use a bit of coconut oil (recommended). Place spoonfuls of batter on the pan and cook all the way through – about 45 seconds each side.

This recipe yields about 5 pancakes. Stack up em and they are ready to decorate!

I topped these with 1 tbsp of maple syrup, 1 heaping tbsp of plain greek yogurt, a sprinkle of dark chocolate covered chia seeds (yes, these exist! They are amazing! Brand: Salba Chia) and 1 almond protein ball cut up into chunks (Brand: BOUNCE).

Ingredients

  • 2 whole eggs

1. Mash banana

2. Mix in eggs and protein powder and stir until batter like consistency

3. Heat pan on medium heat with 1/2 tbsp or as needed of coconut oil

4. Add spoonfuls of pancake batter to pan and cook each side through - about 45 seconds each side

5. Stack and decorate 🙂

Notes

Greek yogurt makes a delicious smooth and creamy topping with an additional touch of protein!
