Vanilla Chai Coconut MINI Protein Pancakes

I am literally eating these as we speak… as I write and you read haha 🙂 and they are so freakin’ deeelicious! Paired with a Chai tea of course!!

Do you ever wake up in the morning and are like what am I going to have for breakfast this morning? And then it dawned on me (pun intended) PANCAKES, I have not had pancakes in a while! I am being conscious of what I eat, my sugar intake, portion sizes, etc. I am not on a” diet” but actively participating in how much goes in vs how much is burned and I hope my trainer is proud because I made this version of pancakes mini! I actually didn’t do it intentionally but it worked out well that way because I just wanted a little something while still having my protein packed brekkie :0

Stirred up all the ingredients, Chai is one of my fav teas so it inspired these flavours! And coconut goes with like almost anything.. Cooked on medium heat, flipping them about 3-4 times until cooked through and voila they were ready to get stacked, dressed and impress!

I drizzled peanut butter on top (switching it up from the typical maple syrup which is obviously higher in sugar), coconut chips and lemon zest! The lemon zest is absolutely necessary!! It gives it that fresh lemon yumminess that balances out the other flavours. I would like to say it adds the perfect touch <3

Vanilla Chai Coconut MINI Protein Pancakes

Serves: 4 mini pancakes Cooking Time: 10 mins


  • 1 scoop vanilla protein powder (I used Iron Vegan Vanilla)
  • 1/2 tsp cinnamon
  • 1/4 cup oats
  • 1 egg
  • 4 tsbp chilled chai tea
  • 1 tbsp white raisins
  • 2 tbsp coconut chips
  • 1/2 tbsp peanut butter
  • lemon zest



1. Add protein powder, cinnamon, oats, egg and chai tea to blender and BLEND


2. Pour batter into small mixing bowl and stir in 1 tbsp white raisins and 1 tbsp coconut chips crushed


3. On a pan add 1/2 tbsp coconut oil and set on medium heat


4. Use a larger tablespoon to put pancake mix on pan, 4 spoonfuls


5. Cook in heated pan, flipping until cooked through


6. Stack on a plate and dress them up with peanut butter, 1 tbsp coconut chips and lemon zest


*You can add 1 tsp of vanilla extract to blender for extra touch of vanilla if desired
